I am trying to find the quota for broadcast insert and bind. I can not find anything in the YouTube Data API quota calculator. Do you know the quota for this?
Also, is video.insert performed when a LiveBroadcasts.insert is performed?

I'd like to know if it's possible, through an API request, to get the remaining daily quota on a youtube V3 project.
#MickaelLherminez You can find out your daily quota usage and limit in your Google Developer Console (https://console.developers.google.com).
Once you select your project, go to "Dashboard" and click on "YouTube Data API v3" below your graphs.
Once you click it, you can find your quota information in the "Quotas" block on the left side just below what service you're using (in this case YouTube Data API v3)
This is not possible at this time. The most that you can do is use the YouTube API's Quota Calculator to see how much quota you are using in a day and estimate how much you have left. Hopefully, YouTube will add this feature in the future. Sorry I couldn't be of more help.

According to AIM I have - / 0 limit.
When I click "apply for higher quota" I am being redirected to..

This quota metric is actually an internal-only quota bucket that shouldn't affect your usage of BQ. You can safely ignore it (and we'll hide it in the future).

If you'd like to request an increase in one of those quotas, please contact support:
https://cloud.google.com/support/
But note that not all quotas can be adjusted.

We can successfully get an xml response even when we do not provide an API key. As such google says you to provide the developer key like this:

So what should I infer from this behavior? Is the list video method free of any Quota (ie Can I make unlimited calls from any IP at any rate?).
It is limited per IP basis, which is less than API quota. Best practice is to use developer key to have better quota limits.
I am sending from my application queries to the Google elevation api, like http://maps.googleapis.com/maps/api/elevation/json?locations=39.7391536,-104.9847034&sensor=false.
I have reached my daily quota after 2500 requests and google states in their documentation that I can buy extra quota.
However I was unable to find where I could buy this quota increase. Any idea ?
