Docker for Windows fails to start due to "Sequence contains no elements" - hyper-v

Question

I had successfully installed and run Docker for Windows on my machine then literally overnight it stopped working.
Each time I attempt to start Docker I get the following error:

It seems to be a problem with Hyper-V.
I have uninstalled, restarted and reinstalled Hyper-V multiple times (same with Docker). Virtulization is enabled in my BIOS. And, to be clear, this was all working just a few days ago.
What can I do to get docker to start?
