I have a nested accordion but the nested ones inside the second and third accordions do not behave like the one inside the first one.

it seems that you have added the same id="nested" for more than one accordion. The id should be unique.
Also, you can have as many levels as you want. Here is an example with three levels accordion.

In my app there's a page where I am showing several snackbars depending on results from server.
There can be several triggered by the server's result. They are also triggered from different components, so I don't have a single controller that could render them where I want.
So, they all display at once and overlap each other. I linked the official Vuetify docs page because the problem is clearly visible there. Just click on two of the buttons in short enough succession.
Is there any way I could render them such that they would stack one above the other instead of all bottom-centering over each other?
I was thinking I'd need a way to tell them the component that would be their rendering parent. But I can't seem to find a way to do this. Slots don't seem to be much help with this either since I can't declare global ones.
Is there any way I can do this?
I'm using Vue and I wonder if I have a list of components (50 button with the very same function within each one of them) - will Vue recognize it as a repetetive code and reduce to one function that all those 50 button will use or each one will compile it's own function while bundling?

No. Vue will not scan your code for similar code and try to optimize it.
However, when Vue is updating a list of elements rendered with v-for, by default it uses an “in-place patch” strategy. If the order of the data items has changed, instead of moving the DOM elements to match the order of the items, Vue will patch each element in-place and make sure it reflects what should be rendered at that particular index.
Maybe this is what you are confused with? This is not the same as the question you are asking, but the closest thing vue would do "magically".
If you have 50 similar buttons, I would advice you to rather take advantage of props, slots and slot scopes to only have one button component that you can tweek in place where you need them to be different. 50 alike buttons sounds like a bad pattern.
in a vuetify table i do not want to show some headers and their corresponding column. Instead, I want them to be displayed in a table in the extended-item slot. The items of the table are completely user editable. This all works fine too.
The problem is that in the extended-item slot not only the properties of the selected item are displayed, but the properties of all items.
In the vue-dev-tools it is displayed correctly. I think I'm missing something fundamentally simple here. Does anyone have any ideas?

You can do it changing :items="tabItems" by :items="[item]" (i put inside array because one item alone is not legible by :items v-data-table.
If you call tabItems you will iterate over all items again so its better to use filtered expanded-item item instead do hard work manually.
I tried in your sandbox, you can change line 54 with my suggestion and you could check that its working well.

Currently I am using this code to display my data from an array in the bootstrap table:

But I also want to add custom buttons on the side for each row (edit / delete).
Is there a way to customize the columns of a "b-table"? I haven't found anything yet.

I get all the concept of components but one thing I am stuck at is - when to create a component? In other words, what part of the page should be a component?

Taking above image as example, what I think is progress bar can be one component and form, quotes list, blue alert can be second component.
Please advise as necessary.
There can be many reasons for creating components, such as when you need to create a reusable element, splitting the code to make it easier to understand and reduce code complexity.
In your case 1. you can put both of the sections into a single component or you can put them into separate components if you want to reuse them somewhere. 2. if your code is too much and you want to make it simpler to understand in that case you can also create separate components.
