So, from the following link (Difference between OpenNi and NITE), I understand what OpenKinect and NITE are. What is SensorKinect and how does it fit in the picture? From my current understanding, we don't need it.
In case anyone is wondering, I'm intending to use these libraries for skeleton + depth tracking.

SensorKinect is an OpenNI module that allows it to talk with the Kinect. Basically, OpenNI and NITE are middleware and SensorKinect is the hardware driver.
If you're using a Kinect, you need it. If you are using a PrimeSense sensor, you don't.

I'm trying to program a PhoneGap Plugin for by clicking the app. I'm only looking to get the phone number and call duration of the call. Does anyone have any information of coding this either in cross platform or native Objective-C?
This is not possible under any version of iOS on a non-jailbroken device, and doing any type of manipulation of any kind to obtain this information won't be accepted in the app store.

I've done this with Flash and Actionscript but does anyone know how I'd even begin to make a clickable map in iOS?
Is using cocos2d a good approach?
I want to make a clickable map of countries into a mini-game.

I have a question; I want to be able to make an iPhone iOS 5 app which can scan for networks and afterwords and prefereable filter one out [on SSID, for example], and show this in a list
I am looking for a class than can handle this but Im finding a lot of classes that handles services in a network.
I'd recommend that you check out the WWDC videos which are free from Apple about Bonjour. Alternatively, just check out using Bonjour. It's probably the best internet network interface known to man.

This app is using iOS 5's built-in dictionary with UISearchBar.
I want to include this feature for my iOS app.
But, I Can't find document in developer.apple.
If you tell me about it and example code, Please.
Sadly there isn't an api for the built-in dictionary. The only thing you can use in that direction is the UITextChecker class. It seems to me, that the app you are talking about uses it too.

I am trying to figure out how to capture the audio from a given software running on a mac, just like audio hijack does.
I'm aware that this is not the first question on the subject, but I'd like to better understand the possibilities on how to do it.
Crete a user space driver is the only solution to achieve it?
The best way that I've found is to get soundflower from cycling74.com. This basically gives your computer an internal interface that you can route to audio programs. If you then get a DAW like audacity you can choose soundflower as your audio input, set soundflower as your system audio output and record audio directly into your DAW.
