After the deprication of the instagram's API which provides the information about the followers of a user, some 3rd party apps can still provide the information of user's connection. What is the reason behind that?
I assume they are using a private Instagram API by reverse engineering it.
One way to do that is to observe the requests your browser makes (with the developer tools) and then remake the requests in their own code, providing the proper data, cookies, etc.
It can all be observed through the developer tools.

Beside IG's public API which is deprecated now, there are other solutions to achieve this. they may have bought the data from facebook inc or use tools and libraries like instagram private api.

My aim is to select some text from a web page, start a google chrome extension and give the text to a google cloud api (Natural Language API) in my case.

The best way to authenticate your app will depend on the specific needs and use cases of your application. You can see an overview of all the different methods here.
If you are not planning on identifying users nor on using a back end server that handles authenticating (as I assume to be your case), the best option would indeed be to use API keys. They do not identify the user, but are enough for the Natural Language APIs.
To do this you will need to create an API key for the services you want and add the necessary restrictions to make the key as secure as possible. Detailed instructions on how to do this and how to use the key in a url can be found here.
The API call could be made from within the Chrome extension with any JavaScript method capable of performing POST requests. For example using XMLHttpRequest or the Fetch API. You can find an example of the parameters that need to be included in the request here.
You may run into CORS issues when making the request directly from the extension. I recommend reading this answer, where a couple of workarounds for these issues are suggested.
I'm trying to delete all the images/videos of my Instagram account without deleting my account. Doing this manually is taking so much time so I thought maybe I can implement a server-side app that send request to API considering the rate constraints etc. But I can't find any endpoints in Instagram API documentation for delete function of media objects.
I wonder if anyone has any knowledge for this purpose ? I saw some 3rd party apps provide this functionality as a paid service, I wonder if anyone know how they are doing this ?
There is no official endpoints can do this. The only DELETE method is for comments. However, if you don't care about the api is official or not, maybe you can try https://github.com/mgp25/Instagram-API/issues/38 .
Will there be an "activity" endpoint for us 3rd Party developers to use so we may build apps that have the same information as the "official" apps?
Even piecing together data from other endpoints we cannot build such a feature since there's no way for us to get checkin history for users other than "self". We can only get other users last checkin.
Thought I'd read some time ago that the website and official apps were just going to use the api so there must be some hidden/not public endpoints.

The official app does use the same endpoints exposed through the API, but the public API is only a subset of what the official app uses :) (e.g., we don't allow account creation)
Having said that, there's currently no "activity" endpoint we expose, nor will we likely expose one in the future. Sorry bout that!
Twitter offers 'web intents' that are an alternative to OAuth access to their API. Basically, this provides a less feature rich experience, but can still be quite handy. User clicks on 3rd parts websites can create popup windows that check whether the user is logged in to twitter and if they are, allows them to us some Twitter features such as tweeting, retweeting, or following users.
My question is, how could I go about implementing an API like this? Are there tutorials or libraries? I'm not sure what technologie(s) power web intents or where I should start searching.

You can read more about web intents at webintents.org and read the W3C's draft spec. As far as I know, web intents are still somewhat of a new beast on the web and they have not been standardized.

Facebook has a number of APIs, including ones which will allow you to do the thing you describe. The term "posts" is a little vague since that covers a number of things on Facebook, but as an example there is the Status.Set API Call you can be used to update a user's status.
