The name of my iOS app is already taken for English US.
I've noticed that I am able to use the name that I would like to if I make the default language English UK or English CA instead of English US.
Will setting the default language to English UK or English CA, and not having an English US langauge not allow the app to be visible in the US? Are there any other workarounds that I could use to make it so I could use the app name that I would like to for the US app store?
As an option, you can use some long app name as iTunesConnect name e.g. ("Documents 5 - Fast PDF reader, media player and download manager", "Lifesum - Join the health movement").
This name is used on the app store page and defined on iTunesConnect when you upload the app.
The name of your binary is in your Project Setting (Bundle display name) and there you can use shorter name of your app (refering to previous example will be: "Documents" and "Lifesum").
If you could use English UK or CA instead of US in order to achieve desired name of your App then go for it. Your app will not be invisible from US App Store. Until and unless you restrict your app visibility from some countries which obviously you shouldn't do when configuring your App for submission.

I would like to build a Shopify app that can take pictures of the customer using the selfie camera, save them to a customer profile, and allow for guest checkout. I know this is partly possible because this app - https://www.esenca.app is able to achieve the camera functionality component.
Regarding the fine details, how would I create a Shopify app that can do this?
First you create a mobile App using your Flutter or React Native library (or whatever turns your mobile phone crank) with camera access. Ensure your App can take a picture and store it.
Second you would implement the Shopify oAuth pattern into your App, asking for customer permissions, so the merchant could choose to install this App in their store.
Third you would code up an extension in your App that displays this picture in the Customer account section of the App.
Fourth, clean up all the loose ends and profit from your adventure!
My app is live on Appstore and Google Play Store. This is what I want. Except other countries where I have my app. I want to share with different screenshots. For example, my current country is Turkey and my screenshots are in Turkish. I want the screenshots to be in english in other regions. For this, I set up a special store entry in GooglePlaystore. But I can't find how to do it in Appstore.
This will need a new update on App Store.

Then from Prepare for submissions tab go the language menu on the right and scroll down to "not localized" languages and choose English (see the image below)
I recently released a new build of an app to the app store a bit ago. On iTunes connect I set the name which is displayed on the dashboard and in the app store, but when downloaded on a device, the name is the same as the original Xcode project on my computer. What is up with that? Is there something in the plist I need to change?

AFAIK, you have to change the bundle name in info.plist. It's default is $(PRODUCT_NAME). And this product name is the one you put while creating the app in XCode at the beginning.
The App Store data is taken from the info you uploaded in iTunesConnect.
Also, if this varies widely then your app might got rejected. Check the guideline 3.4. About 2% of apps get rejected for this, check here.
The name that should be displayed on the device itself is defined on the plist in XCode in the Bundle Display Name field. The name that's displayed on the App Store is defined on iTunesConnect in the App Name field.
The two fields don't affect one another but they should be similar enough so that Apple's review team won't reject the app.
I am building some software that requires me to display the icons of different apps, and possible save them on a database so I can look it up on demand?
I know you can get the url scheme but is that all you can do with it ? Or is there a way to get the app icons ?
For instance is there a way to get the icon of angry birds via an API call to the IOS system ?
In a non-jailbroken iPhone, you cannot get it from the OS.
You need to query the iTunes service from Apple to get this info ex:

Neigaard, absolutely. Once you submit an app in iTunes Connect, go into "Manage Applications", and select "View Details" for the app. There's a button on the top right that gives you the option to manage localizations.
